Earlier this week I asked my Facebook friends what they would rather me make- Blueberry Crumb Cake or Cinnamon Struesal Coffee Cake. By popular demand I made the Blueberry. I searched and search and searched until I found a recipe that I liked. But of course, me being me, I twisted the recipe to what I wanted to do.
You Will Need:
(Cake)
3/4 Stick of Unsalted Butter (soft not melted)
3/4 Cup of Sugar
2 Large Eggs
Vanilla (eyeball it =] )
1/2 Cup of Sour Cream
1 1/4 Cup Flour
1 Teaspoon of Baking Powder
1/4 Teaspoon of Baking Soda
A Pinch Of Salt
1 Banana, Mashed
Blueberries!!! (Eyeball it)
(Streusel)
1/4 Cup of Sugar
1/3 Cup of Brown Sugar
1 Teaspoon of Cinnamon
1 Stick of Butter (Melted)
1 1/3 Cup of Flour
What You Need To Do:
Preheat your oven to 350 degrees F. I made the streusel first and I suggest that you do as well, combine all ingredients in a bowl and set aside.
For the cake you will need to start by creaming together the butter and sugar for about 4 minutes on high or until very smooth. Add the vanilla, sour cream and banana. Then mix in the flour, baking powder, baking soda, and salt. Last you wiill want to very gently stir in the blueberries.
Put the cake mixture into a greased 9IN pan and then sprinkle all of the streusel on top. It may seem like a lot of topping but trust me you will want all of it on there. It's amazing. Cook for 50 minutes (give or take depending on your oven). Let it cool completely, you may choose to add a sugar glaze to the top. If so, mix two tablespoons of milk with a cup of powdered sugar until you get a nice thick glaze. Lightly drizzle on top! Serve with a nice tall glass of milk =]
During my "poll" on which breakfast cake to make, a friend of mine named Melanie told me that she had a coffee cake recipe that was to die for. Today, she messaged it to me and I immediately went to the kitchen to get started. THIS.CAKE.IS.AMAZING. If blueberries aren't your thing, I suggest that you go to the kitchen right now and make this. You're going to go NUTS.

1 Egg
(Streusel)
1/2 Cup of Brown Sugar
2 Teaspoons of Cinnamon
2 Tablespoons of Butter (Melted)
What You Need To Do:
Mix together the butter, sugar, egg and milk. Once mixture is creamy, add in the dry ingredients. Mix well and then pour half of the batter into your greased pan. Add an even amount of streusel and then finish pouring in the mixture and top with the remaining amount of streusel topping. Bake for 25-30 (give or take depending on your oven) at 375 degrees!!
