Chicken Cuban Pizza

While scouring through my cookbooks yesterday I came across this recipe for "Chicken Cuban Pizza"- it looked really easy and really tasty so I decided to try it! And boy am I glad I did! Mr. Hunky approved too!


I started by putting two chicken breasts in the crock pot with a can of reduced sodium chicken broth, salt, pepper and garlic powder on high for 6 hours. When that was finished I put the chicken breasts in a bowl an shredded the chicken with a fork.


I then preheated the oven to 350- once it was ready to go I put in tortillas for about 8 minutes to brown and get crunchy. While the tortillas were in the oven, in a skillet I added minced garlic, lime juice, corn and black beans until they were heated and the corn starting to brown.


Once I took out the tortillas I threw on lots of cheese, the shredded chicken, and the black bean/corn mixture, chopped cilantro and a little more cheese. Once everything looked yummy I put it back in the oven for about three minutes until the cheese was melted!


I served these pizzas with my homemade salsa (see recipe) and homemade guacamole and chips!! For extra taste you could add sour cream!
