Easy Crock Pot Pineapple Chicken

                                                   
Being a very busy wife and mother there is nothing I love more then an easy yet delicious meal to cook for my family! I'm sure most of us can agree that some days we just don't have time to spend all day in the kitchen and want nothing more than a quick and easy meal we can throw together and forget about until dinner time that the whole family will enjoy.

For busy days I love to use my crock pot I would be so lost without it, I normally cook in it at least once or twice a week and I am always looking for new yummy recipes to try out.






This recipe is one I found on Pinterest and it has become one of our family favorites, so I thought I would share it with you!  The original recipe I found makes way too much for my family so I usually half the recipe, but if you have a larger family you may want to stick to the original one.

What You Need

3 boneless, skinless chicken breasts

1/4 cup ketchup

1/4 tsp. Worcestershire sauce

1/2 tsp. mustard

1/4 cup crushed pineapple with juice

1/4 cup brown sugar

1/2 - 1 can of pineapple chunks without juice

Instructions

Mix all ingredients together minus the pineapple chunks pour over chicken and cook on low for 4-6 hours.  Add the pineapple chunks during the last hour of cooking.  You can also bake this at 350 for 45 minutes and add the pineapple chunks in the last 20 minutes.



I normally serve this with white rice and broccoli, the sauce tastes great poured over the white rice.  Sometimes I add carrots to the pot and serve over white or brown rice, which is also very tasty!  


Another great thing about this recipe is that you can freeze it!  Just throw everything except the pineapple chunks in a freezer bag and freeze until you are ready to use it!
