Broccoli and Cheese Bites - Taste Tested & Approved by Little Mister

Little Mister is one of the pickiest eaters ever. He is so hot and cold when it comes to food that everything I make him to eat is a nerve-racking experience. Will he eat it? Will he love it? Is he tired of this? I just never know.

When it comes to sweets, he's like me and has no problem devouring the whole plate of whatever sweet is put in front of him, but when it comes to healthy things and veggies….yeah right. After having a long conversation with a good friend of mine she inspired me to create a bite sized, veggie infused, muffin for Little Mister, since he loves muffins!

I searched through a few different savory muffin recipes before I decided what I would need and set off to make my own. This recipe only took me a few seconds to throw together and the result was delicious and even mom loved them too! It reminded me a lot of a quiche which I loved, but I loved it even more knowing exactly what was going in it and that Little Mister would be getting some good nutrients!

What You Need:

2 Eggs
1/2 Cup of Cheddar Cheese
1/2 Cup of Italian Bread Crumbs
1 Cup of Fresh Broccoli
Garlic Salt, to taste
Pepper, to taste

What You Need To Do:

Preheat your oven to 375* and spray your mini muffin tin with olive oil spray (or whatever cooking spray you use). Wash and chop your broccoli into small pieces. In a medium sized bowl combine your eggs and bread crumbs until it becomes dough-like. Stir in your cheese, followed by your broccoli. Add garlic salt and pepper to taste (a little bit goes a long way in this recipe). 



Using a spoon, place your mixture into the muffin tin to about 3/4 of the way full. Place in oven and bake for about 10-15 minutes depending on your oven.


Once the edges of your muffins brown on the sides, remove the muffin tin from the oven and flip the muffins using a spoon. Once the muffins are flipped, place in oven and bake for another 10 minutes. This will allow the tops of your muffins to get crispier as they are face down.


Remove muffins from their tin and let cool slightly before enjoying!


These Broccoli & Cheese Bites are great for snacks or as an addition to a meal for your toddler or child! They will love the savory and cheesy taste and you will love that they're still getting nutrients and veggies! It's a win-win for mom and child!

  3. Oh, do these look GOOD! I already have a serious addiction to Cheddar-Broccoli soup - but this looks even better! Going to the supermarket tomorrow for supplies. Sure does make me hungry just looking at the pictures - thanks for this one! Pinned it, saving it, printing it out!

  4. Oh my gosh, I have to try these!! My son is super picky. He's 10. He used to eat everything, but not-so-much lately. He'll be obsessed with grilled cheese for a week, then want nothing to do with them. Same with macaroni and cheese lol! At least now he's eating chicken tenders....it's better than nothing, right? I'd almost kill to have him eat a veggy LOL!! Thanks!!

  8. Thank you for this recipe!! I made them for my daughter today & she has gobbled them up! I have to find the most creative ways to hide veggies & even most fruits in the few foods she will eat so I'm always looking for creative ways to get the good stuff in. I think next time I'm going to try adding finely shredded carrots too.
