3 Scrumptious Recipes For Your 'Straight Out of The Pumpkin' Seeds!

Hi everyone! My name is Jessica and I am so excited to be a guest here at MCO today! Fall is my FAVORITE season and nothing feels or smells more like fall than pumpkin everything! Today I wanted to share with you a few recipes for pumpkin seeds, a wonderful post pumpkin carving treat. This year I decided to get a little crazy and make three different flavors of seeds using some of my favorite ingredients.  
I started by extracting the seeds from two large pumpkins. I used a colander and hot water to separate the seeds from the pumpkin guts aka pumpkin meat (the “official” name for the slime inside.) Once I separated all the seeds, I laid them out to dry for almost 24 hours (overnight and while I was at work.) I then divided the seeds into three equal(ish) parts.

Pumpkin Pie Flavored Pumpkin Seeds:


Ingredients:
1 Cup pumpkin seeds
1 Tbsp melted butter
Equal parts sugar and pumpkin pie spice (I bought mine at Safeway- you can also find recipes online)
*Sugar and pumpkin pie spice should be used according to taste
Directions:
  1. Preheat the oven to 350 degrees
  2. Combine the Sugar and Pumpkin Pie Spice with the melted butter and stir to create a paste
  3. Stir in the pumpkin seeds until evenly coated
  4. Spread evenly on a lined baking sheet (I used parchment paper)
  5. Roast in oven at 350 degrees for 7-9 minutes or until golden brown and crunchy


Cinnamon/Sugar Pumpkin Seeds 
Ingredients:
 1 Cup pumpkin Seeds
1 Tbsp melted butter
Approx. ½ Tsp ground cinnamon
Approx. 1 Tsp sugar
*I like mine with a bit more cinnamon and sugar. I have a sweet tooth. Adjust according to desired taste.
Directions:
  1. Preheat the oven to 350 degrees
  2. Combine the cinnamon and sugar with the melted butter and stir to create a paste
  3. Stir in the pumpkin seeds until evenly coated
  4. Spread evenly on a lined baking sheet (I used parchment paper)
  5. Roast in oven at 350 degrees for 7-9 minutes or until golden brown and crunchy

Parmesan/Garlic Pumpkin Seeds


Ingredients:
1 Cup Pumpkin seeds
1 Tbsp olive oil (I used garlic olive oil)
Grated Parmesan cheese
Garlic powder
Everyday Seasoning (I used a grinder from Trader Joes)
1 Pinch ground cayenne pepper
*Parmesan, garlic powder and everyday seasoning should be used according to desired taste. 
Directions:
  1. Preheat the oven to 350 degrees
  2. Combine all dry ingredients with olive oil
  3. Stir in the pumpkin seeds until evenly coated
  4. Spread evenly on a lined baking sheet (I used parchment paper)
  5. Roast in oven at 350 degrees for 7-9 minutes or until golden brown and crunchy
