Caramel Filled Cookies Recipe

Hi my name is Daedra; I am so excited to say that I am going to be co-writing with Alex on MCO!!  

I am a thirty something year old stay at home mom of two beautiful children and one spoiled husband :)  I just became a stay at home mom a little over a year ago and absolutely love being able to devote my time to taking care of my family.  My life completely changed about a year ago when my husband took a job in a new city and we had to move away from the town I had lived my whole life and leave the rest of my family behind which I have always been very close to (I am a total momma's girl) so this move was definitely one of the hardest things I have done.  Fortunately for me I was introduced to Alex who has become an amazing friend!  She has definitely helped me keep my sanity through the transition of living in a new city.  I am looking forward to working with Alex on her amazing blog and getting to know the fans of MCO! 




Well enough about me for now because I have an ooey gooey cookie recipe I want to share with you! This is my new favorite cookie.  I love anything caramel I mean really who can resist it!! So when I came across this recipe I just knew I had to try them out, and thank goodness I did because they are super delicious!!  I made these for a BBQ we had and everyone absolutely loved them! Some of our guests even asked to take some home with them :)

Ingredients:

1 ¼ cups butter room temperature
1 ½ cups brown sugar
2 eggs
1 tsp. vanilla
1 tsp. salt
3 cups quick oats
2 cups chocolate chips
Approximately 40 unwrapped Rolo candies, frozen


How to Make:

In stand mixer cream butter and brown sugar together for about 1 minute. 


Add in eggs and vanilla and mix until incorporated and smooth. 


Turn mixer to low and add in flour, baking soda, and oats. 


Turn mixer up to medium until evenly mixed.


 Turn mixer down to low and add in chocolate chips.  Mix until evenly distributed.


Chill dough for at least an hour.  Make sure your Rolos are in the freezer.  When dough is ready preheat oven to 350 ° and line baking sheets with parchment paper.  Take about 1 ½ Tablespoons of cookie dough and wrap it around a frozen Rolo.


Bake for 10-12 minutes until edges are golden and tops have just set.  Let cookies cool on baking sheet for 4-5 minutes before transferring them to a wire rack to finish cooling. 


Notes:

Freezing candies and chilling dough is recommended because the Rolo will sink to the bottom of the cookie and stick to your pan.  If you forget to freeze the candies and chill the dough, allow the cookies to cool completely on the baking sheet.

  5. Welcome to the blog! Your story sounds very much like mine. When my husband got a new job out of our home state, we had to move our whole young family away from ALL the family we have! I stay at home with my four little ones, which is both a blessing and extremely trying. haha

  6. So nice to meet you! My husband, 15 month old and I, all relocated from Ohio to Vancouver 2 months ago. We are only doing it with one, but are planning to have my tubes reversed and another babe, next year. :) I cant wait to hear more about you and your family!
